Modify Existing Software Licence
Hi,
I'm probably missing something, but here's what I'm trying to do:
I have a Software License item stored in my 1password database. (In this particular case, it is for iStat menus 4). I have now purchased an upgrade license to iStat menus 5 (it's super cool, you should check it out if you haven't already!). What is considered the best way to "update" my existing license saved in 1Password? If I just edit the existing entry, will the old license be saved just in case? Or should I create a new license entry and just have two entries in my 1Password database for the same software?

When I update software I usually amend the old entry. If there is a new licence key I add those details but keep the old ones (with a note of the respective versions to which they relate, of course). If you have an actual licence file you can simply add that to the entry by dragging and dropping, of course (i.e., that will add the new file and not overwrite the old one).

What I often do to update a Software License item (and other types) is to first make a copy of the original item using Item > Duplicate (or its Command-D (⌘D) shortcut), modify its details with new information, and usually retain the original item. And in some cases, like @Stephen_C mentioned, I'll start with a fresh new Software License item by dragging a license file or application bundle into 1Password and usually keep any related older item(s). Sometimes I'll move certain older items to an archive vault instead of deleting them.
There are different ways of doing this depending on the content/context; no single "best" or "right" one. :)
