Is there a way to create my own categories?

You cannot do that currently. If is an oft-asked feature request. You can, of course, use tags and/or folders as a "container" type work around and you can add custom fields to modify the fields of existing categories if it's more that sort of thing you need.

Sorry it isn't a better answer but Stephen_C is correct that it isn't possible at the moment (and that it is a common request). The issue at hand is the categories are deeply embedded throughout the code with how different categories should behave in different situations.
