Sync Mac iOS kaputt
[switch-to-wifi] it just does not work any more. saying ""Synchronisierung startet" on the iOS device... and after a while "Synchronisierung Problem. Der Vorgang konnte nicht abgeschlossen werden. Operation timed out."

Take a look at this recent AgileBits post which lists a series of steps you can try in order to kick wifi sync back into life.

I see from your post in sync with wifi timing out that rebooting your devices resolved the issue @AgilePfann. It sounds like a Bonjour issue to me given rebooting worked.
