When I delete an item in a category (say "Documents") it switches to a different one.

In this case "Credit Cards"

Also, when I'm in watchtower and I move an item to a different vault it also switches to "Credit Cards" and I have to remember the category I was to switch back.

Also, when I switch to "Secure Notes", create a new one and save it also moves to "Credit Cards". Very annoying.

Thank you for the clarification. I tried to reproduce this in my 1Password for Mac app, but every time I deleted an item, the app stayed in the right category for me. Just out of curiosity, do you see the same thing after rebooting your Mac?
Alternatively, can you please try quitting 1Password completely (right-click on 1Password mini in the menu bar at the top right of your screen > Quit 1Password Completely), and then relaunch 1Password?
