where can I find a good explanation of what kind of stuff goes in the different categories?

We don't have specific explanations for them, but you can see their structure when you create a new item, and look directly at the fields inside it that are automatically created. It should give you an idea what each category does.

For example what's the difference between Logins and Identities?

A login is a username and password, which you use to login to a website. An identity is personal information such as name, surname and address, which is useful to fill in forms for shipping, for example.

Also, Once something is in a particular category can it be moved to another?

No: the only exception is converting a password item (which is just a login item without a username), to a Login item.
