Hello tvisconti, thank you for writing in. I'm sorry about the issue you're running into on Formstack, and I appreciate the information you shared.

I've done some testing on my end and have been able to recreate the same behaviour. I created an issue for our development team for further investigation and added you as an affected user.

In the meantime, I suggest using the 1Password extension pop-over to drag and drop the email first and then using Autofill. I realize this may not be ideal, and apologize for the inconvenience.
