I'm afraid to let you know that there is no option to turn it off. 1Password will detect and grab all the info on the page for the convenience of the situation, like security questions.
As shown in your screenshot, we can click the - icon beside the info you don't want to be saved to delete them.
Or we can manually create a login item in 1Password and associate it with the login website.
