preferred way of documenting "Sign in With" Providers that are not currently supported?

If you prefer not to see the Login item for autofill, I can suggest adding a custom URL field and saving the website address there.

1. Open and unlock 1Password.
2. Locate the Login item or create a new Login item
3. Click "+ add more" and select "URL".
4. Copy the website address into the custom URL field and delete the "website" field. Click "Save".
