If I am logged in to my 1password account and leave my device unattended will an outsider be able to get access to my vault and sign in to websites?

If the 1Password app is locked on your device than someone would need your account password (or face/fingerprint if you have biometric unlock turned on) to unlock 1Password and decrypt and view your data.
I recommend locking 1Password when you're away from your device. You can configure how often 1Password auto-locks: How to set 1Password to lock automatically
You can also lock the device itself. Let me know if you have any questions. 🙂
