Does 1Password change users' auto-lock settings via software updates?
Specifically under Security > Unlock and Auto-lock sections, have software updates been changing this?
This seems to be happening, and I'd love to rule out 1Password changing these settings as a potential reason.

No, 1Password won't change those settings without you specifically requesting it. If anything, I'd suspect that 1Password either doesn't have (or sometimes loses) the permission to read from or write to its settings file, but that's only a guess at this stage, and we'd need to look into this further.
