I've run into a similar problem with those two keys. I'm looking to restrict the TouchID and FaceID unlocks. I've set the following macApp preferences using Jamf.
<dict> <key>security.authenticatedUnlock.appleFaceID</key> <false/> <key>security.authenticatedUnlock.appleTouchId</key> <false/> </dict>
Did the OP get this working? Is there an issue with iOS app and these keys?

Are you able to replicate this issue? Or do you see something that is incorrect in my process?
I've tried removing / reinstalling the app after the settings are applied to the mobile device App. Within the mobile app, I'm navigating to settings > Security > under Unlock, i still see the options to use Face ID.
Ideally I would also like to lock down the passcode feature as well, so that only the 1Password Account password can be used
