I'm experiencing the same issue on Mac, except that the values are displayed correctly in the desktop app but the browser extension displays them with that one month offset.
I've raised a support ticket for it (#RZS-23846-251).1Password version: 8.10.54

In case someone else finds this bug/thread, I got an answer from support - it's being fixed:
Our Development team have already written a fix for this issue, which is currently being tested in the Beta build of 1Password. If you're interested in giving the Beta a try to test whether you'll notice an improvement, you can learn how to opt-in the beta with the following article:
If you prefer to remain with the stable Production release of 1Password, while I don't have a timeline to share as to when this fix will make its way there, keeping 1Password up to date will ensure that you can receive any fixes and improvements as soon as they're available.

Every birth date in Mac Chrome extension is showing the wrong month (one month later) for every Identity while every birth date in the 1Password for Mac is correct.
Example: expected birth date 01/01/2024, browser extension showing 02/01/2024.

This is happening to all dates, not just birth dates. I was about to put the incorrect dates into an airline form, which would have been very expensive to fix (they might not have let me travel). Fortunately I noticed my birth date was incorrect. Also, it doesn't matter which locale.
