In the case of 1Password, the Safari extension will allow you to fill your login credentials to the web sites you visit. To use it, you'll need to turn it on. Visit a website and tap the square with an up arrow. On the bottom row you'll see icons for things like Print, Add Bookmark, etc. Tap the far right icon labeled More. Switch on the extension for 1Password. From then on, once you're on a login page, you'd tap the square with up arrow and pick 1Password from the list. If 1Password isn't open, you'll be prompted for your master password and then the credentials will be filled in. You still have to submit them manually. Much more convenient, IMO, that copy and paste.
There is also another extension type that allows 1Password to fill in your credentials in apps, but the developer must add special code to allow 1Password to talk to the app. The list of apps that can use this is somewhat limited so far.

Basically, extensions makes the browsers more fun to use, especially with 1Password included to help you manage your data. It extends the ability of the browsers to do more with small tools you can install.
With 1Password extension, you can open it in Mobile Safari and have it fill in your data on the websites.
