How about a keychain, 1Password, etc tutorial?
I would like to see a brief tutorial on 1Password versus keychain versus iCloud keychain. Since I use only Apple devices and have 1 Password on all of them, I can't figure out why I want or need keychain or iCloud keychain. And I am paranoid about storing anything in keychain for the simple reason it is unlocked, with only my login PW protecting it once the screen locks. And since all my really important data lives in an encrypted sparsebundle if my computer were stolen I am pretty secure. So why not delete my keychain, and avoid iCloud keychain? Or am I oversimplifying things?

I've done exactly what you seem to be interested in doing. I shut off the iCloud keychair and deleted all of the information it contains. I now let 1Password handle all of what it used to do.

What about the Yosemite keychain ? How about deleting the app or else deleting everything in it?

I've never used iCloud keychain because for me there was simply no point, I'd been using 1Password for a while on both Mac and iOS and I was happy.
As far as your keychain on your Mac you don't want to delete that. I'm pretty sure you need one and will be forced to create a new one if you do delete the current one. There are four in general use and they hold details such as Wi-Fi access point passwords, certificates (needed for confirming https), NAS passwords and some programs may use it to store passwords too e.g. Lingo, an IRC app available in Apple's MAS uses it as well as Safari for details about your Extensions. I'm not saying your usage can't be minimised but you definitely want a keychain.
If you're worried at all about what Safari might have stored in it in terms of logins you can easily wipe those entries from within Safari. All you have to do is open Safari's preferences and switch to the Passwords tab. In there you will find a button titled Remove All. That will remove all the stored passwords from the keychain.

Yes, littlebobbytables. I'll give it a try and let you know. But now I am paranoid. I keep the keychain unlocked. I tried operating once with it locked, but that was a big hassle. So I found out how to make and encrypted sparsebundle, where I keep all my sensitive data. The rest of the data on the machine isn't sensitive, were it compromised. But if the WiFi PW is stored in the keychain a bad guy could who stole my Mac would be able to get right in. I guess I can lock it and live with the hassle or else really strengthen my account PW (more typing and more to remember).

I'm glad you're thinking strongly about the security of your data, as well as your Mac in general! Like littlebobbytables, I don't use iCloud Keychain, so I don't have much advice to offer for that. But if you're concerned about the security of your Mac, I strongly recommend using the FileVault feature in OS X (System Preferences > Security & Privacy > FileVault).
