Good morning @wkleem. You create tags by adding them to an item. For instance, if you edit an item and type the text important into the tag field, when you save that item a new tag named important will be created. Hope this helps!
yes, tags are indeed case sensitive. So if you tag one item with important and another with ImportanT you will have two different tags in the tab Organize in 1Password for iOS.
