I have current passwords to a variety of sites, and now installed 1Password...how do go about changing the originals for more secure 1Password versions?.

Have you saved Login items for those sites in 1Password? If so, you can follow the steps in this guide to change those passwords: How to change a password for a site saved in 1Password
