Demo vault contents in fill extension
I've discovered that the demo vault contents appear in the 1P extension in Safari when filling forms. Lots of Wendy Appleseeds offered for things like Amazon, filling credit cards, etc.

It sounds like you have the Demo Vault open, rather than your Primary one. You can switch between the with the keyboard shortcut of Command (vault number), or by clicking the dropdown menu join the upper left corner of the main app. I'm guessing that if you look there now, you'll see it show Demo, not Primary.
Edit: Oops, my directions for seeking out the switch option is for the Mac desktop, not iOS. In the iOS application, you got to the 1Password settings (the gear wheel icon), where the first line deals with Vaults and shows the currently open vault. If you tap Vaults, you'll find the place to switch between vaults.

Nah, if it were that easy I'd have fixed my user error by now since my own logins wouldn't show up. What's happening (in the case of Amazon) is that I am seeing my Amazon account, my fiancée's, my business account, a the account shared by my Godmother and her friend/business partner, and Wendy Appleseed.
This doesn't happen in the 1P iOS app, but does happen in the 1P browser extension for Safari.

@tjcarter - Well, I'll be darned! I haven't had the Demo vault active in my iOS installations, so I created it on my iPad a few minutes ago. Just to test it, I activated the extension while on the AgileBits forum, when I scrolled down to the bottom of what appeared in the 1Password extension, there were three Identity entries that come from the Demo vault. They are mixed into by own Primary vault data. And I don't see this mixup in the main application either - only in the extension.
I'm running beta Version 5.5 (505020), for the benefit of the AgileBits folks who will need to follow up on this. It certainly doesn't seem like this should be the correct behavior. That is, I would judge it to be a bug.
Here is what my installation looks like when the Demo vault exists, even though the Primary vault is the active one.

I apologize for the confusion here! This is actually intended behaviour. The 1Password App Extension is designed to show data from all of your vaults, demo vault included. The upside of this is that if you have data spread across multiple vaults, you can see all of your matching Logins at once. The potential downside is that, if you have a LOT of data, it can get a little bit cluttered.
However, because the demo vault has limited usefulness if you're not currently showing off 1Password, you might want to simply delete it so that it is not cluttering up your extension.
I hope this helps! We are looking at ways to refine the extension to make it more useful for users with multiple vaults, and I'll pass along to our developers that the current implementation is a bit unclear to you.
