protection password on the Apple Watch does not work if you double clic on the right bouton, the application opens instantly without requiring a password. so if someone has take your Apple watch and double click the right button he get access to all your secrets...

@oceanmaster: Correct. If you've opened 1Password, unlocked it with your PIN, switch away, and then switch back...it's still going to be unlocked, since you've unlocked it.

watchOS does not allow apps to open and close themselves. The OS manages this. Apps are removed from memory when the OS decides it needs the memory back (often for another app).

But if someone takes your Apple Watch, they'll have to unlock the Watch itself before they can do anything with your apps, 1Password or otherwise:

We have designed the watch app to require that you have a passcode lock set for your device. As described above, the items that are made available to your Watch are protected only by your iOS device passcode, and not by your Master Password. Therefore it is essential that you have a passcode set.
