Where is Family data stored?

Looking for a little bit of transparency here.

We've been trusting Dropbox (previously on AWS) for a long time now. It's been reliable with high availability. iCloud has recently now also reached that level (in my opinion). Where is Family data stored and how can we be sure of availability.
