I definitely could see folks using op --version to ensure the version of op installed has the features required for operations happening later on. While reproducing your report, I did notice that op update returns with an exit status of 0 and also displays the version. That's not a perfect answer, as it's logical to assume that might perform an update of op in the not so distant future.
