Editing fields
I recently noticed an issue while adding fields in a secure note: After selecting the field type (e.g., “Text”), the new field is added and label/title is “Text”. I have to tap in the field to bring up the keyboard, then delete “Text”. I should have to do that, but I do—every time. It would be better if this were blank, or maybe it’d be like the light grey help-text-in-the-field-that-disappears-as-soon-as-you-make-the-field-active type of text that’s common in web forms.

You're not wrong. It's certainly a usability concern. But at the same time the placeholder text is also helpful as far as usability, especially for less-advanced users. iOS doesn't quite work the way webpages do, but perhaps we can do something in this area in the future.
