Sharing with employees
I have organized a folder in 1password of all the sites/passwords that certain employees need to have. How do I share that particular folder only, and no other folders, with an employee?

You can't do that using a single vault. You'd have to create a second vault and move all of the shared logins into the new vault.

That's correct, and the easiest way to do that is probably to select all the items in that folder, press Ctrl+C, choose File > New 1Password Vault, and press Ctrl+V in the new vault.
Once you have a new vault, put it in a separate folder within the Dropbox local storage, use Dropbox's "share folder" feature to share that folder with the employee's Dropbox account, and give the employee the master password for the vault.
Note that the employee will have full access to the shared vault. Any changes either of you make will affect the other within seconds (as soon as Dropbox syncs the vault).
