Creating a new sub menu

I am new to 1password. I want to enter an auto insurance card in my wallet. When I go to wallet and tap new item a sub menu appears but nothing for insurance. How do I create this category so I can enter the info.

You can't. The categories are fixed. I'd just suggest you use the Membership category for this.

Custom categories (also called custom templates) are a long-standing requested feature, @1treetop2‌, that would be a huge undertaking to implement and release on all platforms simultaneously, and we've just never and the resources to tackle it.
