This PIN is in the notes of the Login
Is this normal behaviour for 1Password?

I don't know about "projected across any window", but the 1Password extension currently does have a feature to display the contents of a Login item's Notes field (if non-empty) when you let the pointer rest over the Login in the extension menu. The tool tip should appear near the pointer, though.

An upcoming beta build will include an option to disable that feature.

A simple solution would be to record the PIN in a custom field, rather than in the Notes field.
