Multiple vaults on my phone
I just got 1Password and thought it was a full solution for my family's needs. I set up a vault. My wife set up a vault. And we set up a shared vault. Come to find out that I need to pay for the ProSetting to look at my vault and my shared vault on my phone (same for my wife). That's really frustrating. I don't need any of the other ProSettings features, I just want to be able to see all my vaults on my phone... and I don't see why I should have to pay extra for that. Is there a way to get that functionality?

The simple answer to your question is "no". As you've discovered 1P for Mac and 1P for iOS are completely separate products.
1Password is licensed per person and per platform, rather than per device. You can read more about AgileBits' approach to software licensing in this knowledge base article.
There are other problems with "bundle" licences, of course. Some people may not want the extra licence and so don't want to pay more. There is also the practical problem of bundling something non-Apple store—e.g., the AgileBits store version of 1P with an Apple store product (e.g., 1P for iOS)—Apple simply won't allow you to do it.
Finally, although you say:

you will probably find in due course that it's very helpful to see some of the additional categories that are included in the pro features.
I should make it clear I'm not employed by AgileBits so these are only my personal views.

I'm sorry for any confusion about that! Stephen's answer is spot-on, hopefully that helped to clear things up.
As Khad explained to you recently, your purchase of 1Password 5 for Mac from the Mac App Store allows you and your family members to use 1Password on all of your Macs (via Family Sharing). Mac computers and iOS devices run different operating systems, so they use different apps, and we aren't able to sell 1Password for Mac and iOS together as a bundle. Therefore, the iOS version of 1Password is sold separately.
1Password 5 for iOS is a free download, and offers free basic features. If you would like to use any of the Pro Features in 1Password 5 for iOS, you'll need to unlock those with an in-app purchase. That purchase would allow you to activate Pro Features in 1Password 5 on all your iOS 8 devices associated with your Apple ID.
