New Mac, which version to keep?

ModeratorTypically, 1Password 8 is named 1Password. Did you previously use 1Password 6? If so, you may see the same naming convention for it.
1Password for Safari is used alongside 1Password (8). You should have both if you use the Safari browser.
The easiest way is to drag the application to the trash from the Finder window. If it refuses to go then it's open and running which indicates you're likely using it. If for some reason you move a copy you use you can replace the application with a fresh download.
Be sure NOT to use a app cleaner. Drag the application to the trash.
