Finally, I found a very satisfying solution by using Chrome to launch my web applications as applications on MacOS. In Chrome, when you are on your web application on Chrome, you click on 3dots > Cast, Save and Share > Install page as app and then type a name for your app. Then a new app will be created in the launchPad. This new app will be launch in a separated window like any app installed on your laptop. Of course, this has nothing to do with integrating this to 1P but I like the way you can define and quickly use your web app or your app from the LaunchPad. I am working to a way to integrate both the 1P definitions and the Chrome Web App into one definition using CLI.

I tried the collections and yes this is a really good idea : I can group together different vault contents and then when I click on a collection I only see a list of logins. And I see the idea to start creating different collections that groups all the applications that I need. However, the next step is to use a browser to connect to 1Password web server and then display all my collections and connect from here to my applications. Unfortunately, from the web app (https://my.1password.com/home), you cannot visualize your collections... Maybe this will come in the future ...
