Great questions! If you'd like to have a subset of vaults and view that in All Items, creating a collection and then switching between collections as needed would be your best bet.
As for the version numbering, the previous 1Password extension for Safari was provided by the 1Password app itself and as such displayed the version number of the 1Password app. As the 1Password app and 1Password for Safari are two completely different downloads, they each have their own version numbers, and version 2.1.4 of 1Password for Safari is currently the most up to date version available.
